The New Hotel Colorado Restaurant

As part of a $2 million renovation, a brand new restaurant has been unveiled at the Hotel Colorado. The restaurant, formerly in the lobby, has relocated to the interior area of the hotel between the two grand staircases.  An updated rendition of the historic waterfall once again serves as the centerpiece for the dining room.  An additional private dining area has been created to be used for parties, meetings, rehearsal dinners and other special gatherings.  There is no detail left unattended at this Western Slope gem, where a casual dining experience is infused with an impressive sense of romantic sophistication.  Open daily for breakfast, lunch and dinner.

Polo Wine and Martini Lounge

Adjacent to the restaurant is the new Polo Wine and Martini Lounge featuring signature Tapas, wine flights, martinis, cigars, desserts, and cordials reminiscent of the early 1900's where Teddy Roosevelt and Al Capone spent their holidays with family and friends.   Open evenings, year-round.

Courtyard Café  

Throughout the summer, enjoy the scenic Courtyard Café and Copper Bar, popular among guests and locals alike.  Musicians perform anything from Caribbean tunes to bluesy ballads regularly on warm summer nights.  Floral lined walkways create a colorful backdrop for the courtyard's centerpiece fountain.  Chef Jackson brings a balance of seasonal ingredients and creative themes each designed to tantalize the palate.  An extensive summer cocktail and wine list complements the menu to provide an exceptional dining experience.  Open seasonally for lunch, dinner and cocktails.
